The Recipe Conversion Factor (RCF) Formula
To scale any ingredient quantity:
Recipe Conversion Factor (RCF) = Desired Yield (Portions) / Original Recipe Yield (Portions)
New Ingredient Amount = Original Ingredient Amount × RCF
Example Calculation
Scaling a cookie recipe from 12 servings up to 30 servings:
RCF = 30 / 12 = 2.5
- Original Flour (2 cups):
2 × 2.5 = 5.0 cups - Original Sugar (1.5 cups):
1.5 × 2.5 = 3.75 cups - Original Butter (0.5 cup):

4 Golden Rules for Scaling Recipes
