How to Calculate Meat Cooking Times by Weight & USDA Internal Temps

Timing a holiday Thanksgiving turkey, Christmas prime rib roast, or weekend BBQ brisket requires balancing minutes-per-pound guidelines against accurate internal meat thermometer readings.

The Roasting Time Formula

Total Roasting Time (Minutes) = Meat Weight (Pounds) × Minutes Per Pound (at Specified Oven Temp)

Example: 15-Pound Whole Turkey (Unstuffed at 325°F / 165°C)

  • Roasting Rate: ~13 to 15 minutes per pound.
  • Calculation: 15 lbs × 14 mins/lb = 210 minutes = 3 hours and 30 minutes.
  • Resting Time: Add 25 to 30 minutes of tented resting before carving.

What is Carryover Cooking?

When large roasts are removed from the oven, residual heat trapped in the outer layers continues migrating inward toward the core during the resting period. A large 15-lb prime rib or turkey will rise by an additional 5°F to 10°F while resting on the cutting board. Always pull your meat from the oven 5°F below your final target temperature.
